Lots of restaurants describe eggs as “farm fresh” and breads as “warm from the oven.”

3•Café actually delivers on both counts. We use eggs from our own flock of organically raised, free-range chickens, and our bread is baked fresh at our own bakery. In season, we use our own organically grown fruits and vegetables as well as fresh fruits and vegetables from local growers. We intend to create a space where you can share a fantastic tasting, fresh cooked meal while enjoying the company of friends in a warm, comfortable atmosphere.

Owner Cathie Albrecht caters to the special dietary needs of vegans and people with food allergies. In fact, her vegan-friendly chocolate cake has become one of her best sellers. As she always says,  “Preparing and sharing food is an act of love.”

Three delicious meals served up and sampled at 3 Cafe

Reminder Publications dined on organic delights at 3 Cafe at 684 Belmont Ave.

SPRINGFIELD — So how many local restaurants use eggs from their own organically raised flock of chickens?

As far as I know, there’s only one: 3 Cafe at 684 Belmont Ave.

Owner and chef Cathie Albrecht has established a cozy neighborhood breakfast and lunch spot with a real difference. Albrecht features home baked breads and lovingly created desserts as well as seasonal dishes that showcase locally grown produce.

The desserts are prepared three ways — a regular recipe and then a vegan version as well as a gluten-free one.

Accompanied by staffers Courtney Llewellyn and Mike Briotta, we tried out the 3 Cafe offerings last week. With only seven tables in the spot — there is an outdoor dining area during the warmer months this is a restaurant where personal service is truly part of the dining experience.

Cathie Albrecht - WGBY's On the Menu Program

Cathie was recently featured on our local PBS affiliate, WGBY Springfield, on the On the Menu Program.
She prepares a fresh garlic and tomato bruschetta, a squash blossom, zucchini and goat cheese frittata and finally some fruit filled tarts with fresh whipped cream. You can watch the whole show at the WGBY web site! CLICK HERE.
